This chicken Parmesan meatballs recipe is a game-changer!
I call this recipe a “high ROI” (return-on-investment) recipe. With only 4 ingredients (and a few additional seasonings) and in no time at all, you have something nourishing and delicious.
These meatballs are a perfect, high-protein healthy snack, lunches, or adding them to a pasta or gnocchi dish for a quick and easy dinner.
I love having a batch of these chicken parm meatballs in my fridge most week.
Even if I’m not sure how or when I’m going to use them, (slash I’m on my A-game), I go ahead and made them because I always end up using them.
And, yes, they freeze great so doubling the recipe is always a good idea.

Ingredients + Instructions for Chicken Parmesan Meatballs

Ingredients
- 16 oz ground chicken
- 1 egg
- 1/2-3/4 cup bread crumbs
- 1/2-3/4 cup Parmesan cheese
- 1 Tbsp olive oil
- 1 Tbsp salt
- 1 Tbsp pepper
- 1 Tbsp garlic salt or French Picnic Sea Salt
Instructions
- Preheat oven to 350 F.
- Mix together all ingredients in medium bowl. Start with wooden spoon and finish combining by hand.
- Roll to form golfball size balls. Place on lined baking sheet (They do not expand so you can place close together).
- Bake for 15-18 minutes (until internal temperature is 165 F.)
- Optional: broil for a few minutes, until golden brown

- 2-3x recipe and freeze
- Add a slice of cheese about 1 minute before taking out of the oven (so it’s melted)
- Use additional/different seasonings
