You’re life will never be the same after you make these sheet pan tacos!

Tacos are a staple in our household.
In fact, since two of my meal prep hacks are: using a sheet pan as often as possible and weekly meal themes, it was a total lightbulb moment when sheet pan tacos dawned on me.
This is now one of my favorite quick weeknight dinners!
Read below for all the details on these sheet pan tacos aka your new favorite dinner recipe for busy weeknights!
Ingredients for Sheet Pan Tacos
For the taco base
- Tortillas (these are my fave)
- 1 – 16 oz refried beans
- 1 – 1 lb ground beef
- 1 package taco season (Trader Joe’s Taco Seasoning Mix is so good and filled with good ingredients!)
- Cheese – any cheese will do, and you can add as much as you’d like.
For the pico de gallo topping
- 1/2 red onion
- 3 medium tomatoes
- 1 jalapeno pepper, seeded
- 1 bunch cilantro
- 2 limes
- Salt to taste
Toppings
- Sour cream
- Hot sauce
- Magic Unicorn Salt
Recipe
- Preheat oven to 350 degree Fahrenheit.
- In an oiled skillet over medium heat, brown ground beef then add taco seasoning mix.
- Meanwhile, prep pico de gallo. Dice and combine in medium bowl red onion, tomatoes, jalapeno pepper, cilantro, lime, and salt.
- Place tortillas on sheet pan.
- Open can of refried beans, and spread a generous amount to tortilla.
- Add ground beef and cheese.
- Put in oven and cook until cheese has melted.
- Top with pico de gallo and any other desired toppings.
- Dinner is served!

- Shredded chicken, sweet potato, and black beans
- Ground beef, cheese, and guacamole
- Steak, Cotija, white onion, cilantro, salsa verde
- Carnitas, pineapple, cilantro, onion, Monterey jack cheese
Meal prep pro tips
- Brown the meat, chop toppings, and grate cheese the morning of or night before for an even quicker dinner reicpe.
- Always have: tortillas in your refrigerator, refried beans in your pantry, meat, cheese, and chopped bell pepper and onion in your freezer so you can a make these sheet pan tacos when you’re in a pinch.
- These keep great in the refrigerator! Double the number of tacos your need for dinner for lunch or dinner the next day.
- Involve your kids!
